OLIVE OIL Umbria is an important source of olive oil production, and the use of good quality olive oil in cooking is crucial to the end result. Tasting the new olive oil from various local producers was a fascinating experience at Agriturismo Agrincontri and this can be compared in importance, to wine tasting. There are various levels of local production of olive oil, for example Agriturismo Le Grazie, who pick and process their own olives for consumption at their own wonderful restaurant. On another scale, the frantoio S.S. Agricola S.Romualdo on the outskirts of MonteCastello di Vibio. Agristurismo Le Grazie uses a traditional method with old stone wheel to create an olive paste, which is spread onto fibrous pads and then pressed, spun and filtered. Frantoio S.S. Agricola S.Romualdo processes olives for many of the local farmers and uses more modern machinery, which separates the paste by centrifuge, filters, spins and pumps the resulting oil into containers.
